OUR CONCEPT

An optimistic kitchen

What is an optimistic and committed cuisine?

It is a cuisine that is turned towards the future thanks to a united chain of small, mainly French producers .

In addition, we use seasonal products , we favor local , organic products and above all we promote short circuits !

Concretely, the eggs, the farmhouse fromage blanc, some of our cheeses, some of our seasonal fruits and vegetables, and the legumes that we use in our recipes are ORGANIC and from Île-de-France, coming directly from the ORGANIC cooperative of Île de France.

The Mozzarella and Burrata di buffala, the olive oil and the grilled vegetables are 100% of Italian origin and certified "small producers" .

We source our fresh trout and sea bass directly from eco-responsible French fish farms, which care about their fish and the environment.

Every day we offer a dish made with fresh fish direct from a French producer .

Finally, our varied breads are made using organic or Label Rouge flour from Île-de-France.

Sunny plates

At Apego, we are attached to the flavors that we put in our cuisine which is tinged with Mediterranean colors . Also, spices such as zaatar, cumin, sumac in our plates and the recipes on our menu warm the heart ... without denying our values!

We draw inspiration from the culinary riches of the Levant and the Mediterranean basin to create dishes with the aromas of fresh herbs and delicately measured spices . With us, each plate is a true sensory journey , between varied textures and explosions of flavors . Our dishes highlight simple and authentic products, enhanced by preparations that respect both tradition and modernity .

Our cuisine is a true tribute to sharing and conviviality , two fundamental values of Levantine culture.

We like to offer dishes to be enjoyed together, in a
warm and family spirit , where everyone can nibble, discover, and appreciate the diversity of tastes. Whether generous mezzés or dishes to share, our creations reflect the idea that food is above all a moment of communion .

Brunch or Drunch Healthy , meanwhile, revisit gourmet classics with a touch of balance. Here, freshness and lightness are combined with pleasure and indulgence . Fruits, seasonal vegetables, grains, legumes and aromatic herbs are found in colorful and comforting plates. It is a healthy cuisine, where well-being and pleasure are not mutually exclusive, but complement each other harmoniously.

Sensitive to eating well, we develop balanced recipes for maximum healthy and gourmet pleasure ! Whether you are omnivorous or vegetarian, our menu will delight you, combining freshness, flavors and well-being in each dish. At Apego, we firmly believe that it is possible to indulge yourself while taking care of your body , without compromising on taste.

We favor natural ingredients , rich in nutrients , with particular attention to the balance between proteins, fibers and good fats . Each dish is designed to offer both an explosion of flavors and nutritional benefits , allowing you to enjoy without guilt.

Régis FEREY , our pastry chef, revisits certain pastry classics with healthy alternatives, by reducing gluten, replacing refined sugar with a reduced quantity of natural sugars and choosing ingredients that respect both your health and your taste buds.

Thus, new recipes that are less sweet but just as tasty are being developed. Gluten-free , lactose-free , and high-fiber desserts will soon be available to satisfy all your sweet cravings, while taking care of your well-being. The Apego Team

Nathalie & Eric, a tandem involved in the restaurant business since 2006 , were keen to create Apégo, a friendly and sharing place around healthy cuisine and pastries, showcasing healthy brunch at will or à la carte.

Their mission: to offer gourmet dishes and balanced to Mediterranean influencers, respectful of the environment, producers and customers. With their Chef, they develop creative and seasonal recipes, rich in flavors and colors.

Their values : promoting responsible agriculture, mainly organic, local and short supply chains.

Nathalie develops ever more creative and tasty recipes depending on the seasons.
